I know it sounds a little strange to make brownies out of beans, but please don't be put off, these are a family favourite in my home and are a much lower fat, higher protein and fibre version than your more traditional brownie.
1 carton/tin of black beans
2 tbsp. cocoa powder
1/2 cup oats
3 tbsp. liquid sugar of choice - e.g. honey, agave syrup
2 tbsp. unrefined sugar
2 tbsp. coconut oil
1/2 tsp. baking power
1/2 cup pecan nuts
1/2 cup chocolate chips
1/2 cup raisons
1. Grease and line a baking tray and preheat the oven to 180oC before draining and blending black beans to a smooth paste. I personally use a nutri bullet but a food processor will work well too. Add oats to blender and continue to blend until no oats are visible.
2. Add cocoa powder, honey or alternate sugar choice, unrefined sugar, coconut oil and baking flour to blender and continue to blend for 60 seconds.
3. Finally add egg and blend for 30 seconds until combined. If adding nuts or chocolate chips mix these in to the mixture before pouring into pre lined baking tray and bake for 20-25 minutes or until the top starts to crack open.
