Green Lentil and Potato Stew

This stew is perfect for cold wintery days when you need a little comfort food; it is high in fibre and protein so will keep you fuller for longer.

Ingredients (serves 2)

  • 2 baking potatoes - white or sweet

  • 2 cartons or tins of green lentils

  • 1 cup mixed peas and cartons (frozen is fine)

  • 1 cup broccoli (frozen is fine)

  • 1 cup kale

  • 1/2 white onion

  • 1 garlic clove

  • 1/4 tsp. thyme

  • 1/4 tsp. oregano

  • 2 cups water


1. Preheat oven to 180oc and chop potatoes into rough chunks. Season and place on baking tray to roast for 20-25 minutes. Turning occasionally to ensure evenly roasted.

2. In a large saucepan sauté onion and garlic in spray oil and cover to soften. Add lentils, frozen vegetables, herbs and water and leave to simmer for 10 minutes, add roasted potatoes and serve.
