This salad just vibrates summer vibes, it is delicious hot and cold and contributes hugely to your 10 a day!!
Ingredients (serves one)
100g broad beans
100g fresh peas
1/2 lime juice
handful pea shoots
1 cup shredded ice burg lettuce
1/2 handful mint leaves
1. First bring a small pan of water to the boil, then add the broad beans. Leave to cook for a few minutes and cool, and squeeze the pods out of their skins.
2. In another pan blanche the peas for a few minutes until al dente. Drain and refresh under cool water.
3. Use a potato peeler to peel the courgette into long ribbons and squeeze lime juice over.
4. Pop courgette ribbons on a plate and top with broad beans and peas, squeeze over remaining lime, mix with shredded ice berg lettuce, thinly sliced radishes and mint leaves. Season with salt and pepper if desired.
