Tofu or Chicken Pho

Pho is a Vietnamese dish that is includes noodles, meat or tofu and herbs in a broth or clear soup. This is my super simple version that only takes 10 minutes to prepare but is filled with nutrients. 

 

Ingredients (serves 1)

 

  • 1 chicken breast or 100g firm tofu 

  • 1 portion dried or fresh rice noodles 

  • 1 spring onion

  • 1/2 cup bean sprouts

  • 1/2 cup pak choi

  • 1 fresh chilli 

  • 1/2 handful thai basil

  • 1/2 handful fresh coriander 

  • 1 tsp. black pepper

  • 1 stock cube 

  • 1/2 lime

 

Method

 

1. Oven roast chicken breast for 20-25 minutes until cooked and gently pulled apart using fork. Or if using tofu cut into chunks and fry in 1tsp olive oil until browned.

 

2. In a bowl add boiling water to stock cube and stir until dissolved. Add dried rice noodles and pak choi and cover for 5 minutes.

 

3. Add to bowl chicken or tofu, chopped chilli, chopped spring onion, bean sprouts, basil, coriander and black pepper. Finish with a squeeze of lime juice.
